Preparation:
In a large non-stick skillet, heat oil over medium heat. Add onions and peppers.
Break potato patties into bite-size pieces; add to skillet. Season with salt and pepper. Cook for 3 minutes, stirring occasionally.
Meanwhile in a bowl, scramble eggs. Pour eggs into pan; slightly move around with spatula to cook eggs evenly. When almost cooked, sprinkle with bacon and cheese. Turn off heat, cover to melt cheese.
