Greek Orzo Salad

Greek Orzo Salad


  • 2 cups (500 mL) orzo pasta
  • 1/2 cup (125 mL) red wine vinegar
  • 1/3 cup (75 mL) olive oil
  • 1-1/2 tsp (7 mL) dried oregano
  • 1 clove garlic, minced
  • 1-1/2 cups (375 mL) chopped tomatoes
  • 3/4 cup (175 mL) each, diced sweet red and green peppers
  • 3/4 cup (175 mL) crumbled feta cheese
  • 1/2 cup (125 mL) diced red onion
  • 1/3 cup (75 mL) chopped fresh parsley
  • 16 kalamata olives, pitted and halved
  • salt and pepper, to taste


Cook pasta in boiling water until al dente. Drain and rinse. Place in large bowl. Whisk together vinegar, oil, oregano and garlic. Stir into hot pasta; set aside.

Stir in tomatoes, peppers, cheese, onion, parsley and olives. Season with salt and pepper.
