Jewelled Moroccan Tunisian Rice

Jewelled Moroccan Tunisian Rice


  • 1 tbsp (15 mL) olive oil
  • 4 cups (1 L) M&M Food Market Rice & Vegetable Medley, thawed
  • 1 cup (250 mL) dried fruit i.e. apricots, raisins, cranberries and dates
  • 1/2 tsp (2.5 mL) cinnamon
  • 1/2 tsp (2.5 mL) ginger (freshly grated or dry)
  • 1/2 tsp (2.5 mL) cumin powder
  • 1/2 tsp (2.5 mL) salt
  • slivered almonds for garnish


Cut the apricots and dates to the size of raisins.

Soak all fruits together in hot water.

Sauté the rice in oil using a large non-stick pan. Add spices and stir well. Add fruit and 1/2 cup fruit water, warm through.

Serve topped with almonds.
