Vegetables with Parmesan Vinaigrette

Vegetables with Parmesan Vinaigrette

Ingredients:

  • 2-3 cups (500-750 mL) M&M Vegetable Blend of choice
  • 1 garlic clove, minced
  • 2 tsp (10 mL) white wine vinegar
  • 1/2 tsp (2.5 mL) Dijon mustard
  • 1/4 tsp (1.25 mL) salt
  • 1/4 tsp (1.25 mL) dried basil
  • 1/4 tsp (1.25 mL) dried oregano
  • 1/4 cup (60 mL) olive oil
  • 2 tbsp (30 mL) grated parmesan
  • freshly ground pepper to taste

Preparation:

Microwave vegetables according to package directions.

In the meantime, whisk vinegar, mustard, garlic, salt and spices to combine. Add olive oil in slow stream, whisking to combine. Add parmesan and pepper, whisk to blend.

Drain cooked vegetables well. Add vinaigrette and toss to coat.
 

Tips:

Vinaigrettes are easy - instead of measuring everything out, just eyeball quantities; or, if that makes you uncomfortable, measure the ingredients the first time you make the vinaigrette to get a sense of proportion, and eyeball after that.
