Southwest Sausage Frittata

Southwest Sausage Frittata



Preheat oven to 375º

Lightly grease an oven-safe dish with 1 tsp vegetable oil - place 2 frozen M&M Mild Italian Sausages in dish – bake sausages 35-40 minutes – remove sausages from oven – set aside.

Reduce oven temperature to 350º. 

Place 3 individual M&M Chopped Spinach Portions in microwave safe dish – microwave spinach 2-3 minutes until thawed – fluff with fork. 

Melt 1 Tbsp butter in cast iron skillet (or other oven-safe skillet) over medium-low heat – add M&M Diced Onions and M&M Peaches and Cream Corn to skillet – cook onions and corn, stirring occasionally, until heated through, about 5 minutes – turn burner heat to low. 

Whisk eggs, whipping cream, ground cumin, smoked paprika, chili powder, salt and pepper until well mixed – add thawed spinach to egg mixture and mix well – slice 2 cooked sausages and add to egg mixture – mix well. 

Pour egg mixture over onions and corn – let sit, without stirring, over low heat for 8-10 minutes, until slightly liquidy on top but set on the bottom – carefully place skillet in oven and bake until top is set, about 5-6 minutes. 

Serve hot or cold.


If desired, serve garnished with shredded cheddar cheese and a dollop of sour cream.
