Chateaubriand

A cut well-known to steakhouse restaurant chefs, our Chateaubriand is an exceptionally flavoured, 14 oz. steak cut from the centre of the tenderloin and seasoned to perfection. The large size makes this cut ideal for oven cooking to medium-rare and sliced into individual steaks, or barbecued on the grill to share among your dinner party.

Serving Information:

PREPARE FROM THAWED.

COOKING INSTRUCTIONS

To thaw, place product in refrigerator for 24 hours or in cold water for 1 to 1 1/2 hours. Remove packaging.

BARBECUE (For best results):

  1. Preheat barbecue on high.
  2. Sear chateaubriand on all sides; 2 minutes each.
  3. Turn heat to medium. Grill with lid closed, 14 to 15 minutes for medium-rare. Turn frequently.

OVEN:

  1. Preheat oven (375°F/190°C).
  2. Preheat fry pan on high. Add 1 tbsp (15 mL) oil or butter.
  3. Sear chateaubriand on all sides; 2 to 3 minutes.
  4. Transfer to baking sheet and position in centre of oven.
  5. Cook 15 to 20 minutes for medium-rare.

NOTE: Cook until minimum internal temperature of 145°F (63°C) is reached. Since appliances vary, these instructions are guidelines only.
